Calvados Pacory

Unser Vertreter für die Calvados-Region Domfront: Pacory!

Die Besonderheit der Region Domfront ist der Birnenanteil. Bei einem Calvados der Herkunftsbezeichnung "Domfront" sind mindestens 30% Birnen verarbeitet. Das verleiht dem Calva seinen ganz eigenen Charakter. Naturgemäß kommen die Fruchtnoten vor allem bei den jüngeren Bränden besonders gut hervor. Frédéric Pacory gibt seinen Bränden sogar 60% Birnen bei! Das ergibt sehr fruchtige und dabei sehr runde und ausgewogene Brände. Zudem bietet Pacory aber auch ganz hervorragende ältere Brände! Probieren ist Pflicht!

Und ab 2021 bieten wir Ihnen hier auch unsere erste eigene Fassabfüllung an. Seit September 2019 können wir ein Fass Calva aus dem Jahr 2011 unser eigen nennen! Die ersten Flaschen werden dann bei der Abfüllung bereits 10 Jahre alt sein. Wir sind voller Vorfreude und erwarten einen erstklassigen Brand!

Cidre

Dies ist der Champagner unter den Cidre!

Frédéric Pacory läßt seinen Cidre für zwei Monate im Calvadosfass lagern. Dadurch bekommt dieser Cidre ein einzigartiges Aroma.

Die Kohlensäure ist nicht zugesetzt, sondern entwickelt sich durch die zweite Gärung in der Flasche: wie beim Champagner eben. Einzigartig!
